I’m
Mali, a Certified Nutritional Therapist, a licensed Massage Practitioner and a
mother.
I had the good fortune of being born in a family that valued and enjoyed real foods. My French upbringing taught me that health is not a difficult thing to attain as long as we follow some very simple principles:
- fresh ingredients are what make any dish taste good
- the less processed the food, the better it is
- the longer its shelf life is, the shorter yours become
My
mother shopped every day and cooked 2 beautiful meals. Bread did not come in a
plastic bag, vegetables were in season and meat was from animals that lived
happy lives.
We
had dessert once a week. We did not eat between meals and we drank water.
I
don’t remember ever having soda, chips or candy around the house. I know we
sneaked a few behind her back but we took more pleasure in eating a “tartine” – a
slice of fresh bread lathered with pastured salted butter and homemade jam –
than any lollipop.
Still,
I was plagued with health issues, eczema, asthma, allergies of all sorts. When
I moved to the USA as a young adult, I started experimenting with my diet: from
vegetarian to vegan to “opportunity-vore” to the latest fad advertised by
Oprah, I must have reinvented myself 10 times! The issues did not go away.
It
was not until I took the Nutritional Therapy training that I realized how
unique my system was, as is yours. There is no One-Fits-All diet.
As
each plant has its own root system, so does each person have their very own
constitution. Individualized nutrition is the key to finding the vitality that
true health brings.
